Protected Geographical Indication
Organic farming is based on natural methods. The pigs we select are raised exclusively on organic farms in south-western France (Indication Géographique Protégée), where they benefit from a pleasant climate, rich and diverse vegetation and one of the highest levels of sunshine in France.

The pigs are raised in semi-open-air conditions, and benefit from all the advantages of organic farming. Farm size is limited, reducing the risk of diseases spreading to the herd. Animals are less stressed and less aggressive.
Highly diversified, the pigs are fed on organic vegetable products supplied directly by the breeding farm.

Only natural and organic ingredients are used in our maturing process. Natural salt from Salies de Béarn applied by hand to our organic Bayonne Hams. No added preservatives.
The production of this ham is similar to that of traditional Bayonne Ham, but is carried out separately in order to guarantee the integrity of the product. The minimum curing period for our Organic Bayonne Ham is 12 months.
