Pyrenees aperitifs are made from a grape juice base, with fermentation halted by the addition of alcohol. Then, depending on each recipe, fruit juices, Armagnac, brandies, macerations, or infusions of fruits or plants are added. With an alcohol content of 16% by volume (18% for génépi), these light aperitifs are best enjoyed neat and very chilled.
