Pyrenees aperitifs are crafted from a base of grape juice with fermentation halted by the addition of alcohol. Then, depending on the recipe, fruit juices, Armagnac, eaux-de-vie, or fruit and plant macerations and infusions are added. With an alcohol content of 16% (18% for the génépi), these light aperitifs should be served neat and well chilled.
