The Pyrenean aperitifs are made from a base of grape juice with fermentation stopped by adding alcohol. Then, depending on each recipe, fruit juices, Armagnac, eaux-de-vie, fruit or plant macerations or infusions are added. With an alcohol content of 16% by volume (18% for génépi), these light aperitifs are enjoyed neat and well chilled.
